You ever have one of those nights you have no clue as to what you are going to make for dinner? I know I have lots of those nights! Sometimes we just make a simple breakfast meal for dinner. Who doesn't love breakfast!
But tonight I tried something new. Something I haven't made before and for me when it comes to something I haven't made before I am terrified I am going to make it horrible and have it not taste good! It's healthy and very simple to make. I commute home every day and the drive is about 35-45 minutes depending on weather each way. I get home around 5:30 and for me to be able to have this meal complete in 30-35 minutes is amazing in my books!
I made Skinny Baked Burritos! Sound amazing right? I absolutely LOVED IT! My partner even liked it, which is REALLY GOOD in my books!
Skinny Baked Burritos
Ingredients
1 lb lean ground turkey
1 packet of reduced-sodium taco seasoning (I used Mrs. Dash Taco Seasoning)
8 oz reduced-fat shredded cheese
8 large Tortillas - I used whole-wheat and this number will depend on how much meat you put in each.
1/2 cup reduced-fat sour cream
4 oz of taco sauce
10.75 oz can reduced-fat cream of mushroom soup - I just used one can
Instructions
1. Preheat oven to 350 degrees.
2. Brown lean ground turkey, add reduced-sodium taco seasoning and cook according to package directions.
3. Mix reduced-fat sour cream, taco sauce, and cream of mushroom soup in a separate bowl.
4. Spoon and smooth 1/3 of the soup mixture into a 9" x 13" baking dish - I just put enough to kind of cover the bottom - see picture below.
5. Place approximately 2 tbsp. of meat mixture or as much as you would like and approximately 2 tbs shredded cheese on each tortilla.
6. Roll / fold tortillas and place into a pan seam side down.
7. Spread the rest of the soup mixture onto the rolled tortilla and top with the remaining cheese.
8. Bake for 20-25 minutes until bubbly and cheese is melted. Now my cheese didn't bubble as much since I didn't put as much cheese as called for.
9. Top with your favorite burrito toppings (optional) lettuce, jalapenos, black olives, tomatoes, etc. I ate mine with some banana peppers cut in half!
